When I am not enjoying a thick green smoothie bowl as my first meal of the day, I love to create fun and nourishing “open-faced” toasts. And one of my favourite kinds is definitely the avocado toast! I was never a big fan of avocados growing up, but it all changed about 7 years ago when I switched my diet to include more plant-based options. If you follow me on Instagram, then you know how much I now love me some avocado! I can pretty much add this delicious fruit (yes, technically, it is a fruit) to about any meal (smoothies, salads, soups, and even desserts). So, today I thought I would share with you 3 of my favourite ways to create a delicious and nutritious avocado toast. I hope you enjoy these Avocado Toasts: 3 ways as much as I do ;).
Please feel free to add some of your favourite ingredients to these recipes. Let your imagine run wild because either way, you can never go wrong with an avocado toast :).
That being said, there is 1 element however that could ruin your avocado toast … and that is when the avocado is not ripe enough or has already turned brown and bad… To avoid this from ever happening to you again, I have a simple trick that I share in this video –> Check it out: HERE.
Ok, so now that you know exactly how to always pick the perfect avocado, let me share with you 3 delicious ways to enjoy your avocado toasts.
Avocado Toasts: 3 Ways
The Cucumber Fresh Avocado Toast:
Ingredients:
- Toasts (I love using organic sourdough bread, purchased locally)
- 1/2 cucumber, sliced
- 1/2 avocado, mashed
- Some arugula or baby spinach (any leafy greens of your choice)
- 1 Tbsp of hummus (apply it first under the mashed avocado)
- Some sauerkraut (great for probiotics)
- Sea salt & pepper to taste
- Optional: 1 or 2 soft boiled eggs & a few capers.
Assemble your avocado toast with all of the ingredients by adding the soft-boiled egg(s) last and on top (if you use some, of course). That’s it. Enjoy!
The Sweet Potato Avocado Toast:
Ingredients:
- Toasts
- 1/2 cup of roasted sweet potatoes (leftovers are perfect for this recipe)
- 1/2 avocado: mashed
- Drizzle of extra virgin olive oil
- Sea salt + pepper to taste
- Optional: a side of hummus (1 to 2 Tbsp) & some arugula…
Mash the avocado onto your toasts, add your roasted sweet potatoes and your spices. Garnish with some fresh arugula or baby spinach, if desired. Serve and enjoy!
The Mediterranean Avocado Toast:
Ingredients:
- Toasts
- Half avocado, mashed
- 1/3 cup of arugula
- 1/2 cup of cherry tomatoes, sliced in 1/2
- Some feta or goat cheese
- Drizzle of olive oil
- Sea salt + pepper to taste
- Optional: some fresh olives…
Place all of the ingredients onto your toasts, starting with the mashed avocado & enjoy. This one is a personal favourite of mine ;).
