Lately, I have been feeling inspired to produce new salad recipes all over again. With the return of warmer days, it’s been really fun to play around with different raw veggies in my kitchen to create a few new recipes for you all. This Creamy Kale Salad is definitely worth a try. Its nutrients-rich ingredients will nourish your body, promote detoxification via your liver and beautify your skin too!
Yes, it’s totally possible for a salad to do all of that and taste delicious as well.
This salad is not only super rich in detox-friendly foods (kale, red bell pepper, lemon, garlic, onion & apple), but it is also very easy to re-create at home in about 10 to 15 minutes!
Here is what you will need for this:
Creamy Kale Salad with Tahini Dressing
Serves: 2 as a main; 4 as a side
Ingredients:
- 4 to 5 leaves of kale (washed, de-stemmed & chopped)
- the juice of 1/2 lemon
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 1 avocado, diced
- 1 apple, chopped
- 1 handful of raw almonds, roughly chopped
- sea salt & pepper to taste
- OPTIONAL: a few roasted pumpkin seeds & raisins (handful)
For the dressing:
- 2 to 3 Tbsp of extra virgin olive oil
- 1 Tbsp of apple cider vinegar (raw, unfiltered – preferably)
- 1 Tbsp of rice vinegar
- 1 Tbsp of tahini (sesame paste)
- 1 tsp of turmeric powder
- 1 garlic clove (crushed or thinly chopped)
- sprinkle of sea salt
- OPTIONAL: 1 tsp of raw honey (if you like your salad dressings a little sweet)
Instructions:
Start by preparing your salad. First, add the kale to a big salad bowl with a little bit of sea salt and the lemon juice. Massage your kale until it has wilted and decreased in volume. This part is key to make the kale much easier to digest and assimilate. It’s also more pleasant to eat ;). Then, add the rest of the ingredients to the bowl and set it aside.
Then, follow up with preparing your salad dressing. Simply add all of the ingredients to a blender or whisk them together in a bowl until you obtain a creamy consistency.
Add your dressing to the salad and voilà, you’ve got yourself a delicious and creamy kale salad!
