What better way to start your day then with these deliciously vibrant and super Easy 4-Ingredient Oat Pancakes?! Seriously though, I have shared these pancakes so many times on my Instagram and I always got an amazing response. So, I figured it was time to bring this lovely recipe onto the blog as well. Whether you make these to treat a loved one, on your Sunday brunch or a regular week day (as I often do :p), these pancakes will hit the spot and quickly become one of your favourite breakfasts too because oh how quick and decadent they are! Before we jump into the recipe for these ridiculously easy 4-ingredient oat pancakes, I did wanted to mention that they are the perfect treat for those of you who are lactose intolerant or have gluten sensitivities as they do not use dairy nor any gluten flour.
That being said, the original recipe does call for an egg. So, if you are vegan (or have an egg allergy), you can easily modify this recipe by replacing the 1 egg for 1 Tbsp of ground flax seeds + 3 Tbsp of warm water (wait for the substance to become gel-like).
As for the toppings, it really is up to you how you enjoy dressing up your pancakes. Personally, I love to create a warm fruit compote (using frozen berries and water in a pan) and then add some element of crunch. You don’t even need to add any syrup on these because they are so darn sweet on their own ;).
Alright, now let’s look at how easy it is to create these deliciously vibrant pancakes, shall we?
Easy 4-Ingredient Oat Pancakes
Ingredients:
1/2 cup of oats (100 grams- grind them to flour)
1 banana
1 egg (or “flax egg”)
1/2 tsp baking powder
Optional: 1 Tbsp of oat milk (or your preferred milk)
How to:
Add all of the ingredients to a high-speed blender and mix until you have a batter.
Let it “rest” for just a few minutes while you heat up your pan (especially if using the baking powder – bubbles will start appearing at the top of the batter, which is perfect).
Now, heat up your frying pan. Add some coconut oil (or butter) and start cooking your pancakes.
I always cover them while cooking the first side to make sure the batter cooks thoroughly.
When you’re done, add your favourite toppings to the pancakes. Here are some of my personal favourites and a few suggestions:
- Nut butter (almond especially)
- Yoghurt (so good with these)
- Homemade fruit compote (Add some frozen berries with water until the fruits turn into a compote. Add some honey or maple syrup to sweeten if you’d like)
- fresh fruits (banana, apple, pear, berries, etc)
- coconut flakes
- nuts
- Optional: maple syrup or honey (but these pancakes are naturally sweet on their own ;))
