One of my favourite and easy go-to breakfast ideas is the oatmeal. There is nothing like a delicious and creamy oatmeal to keep you fuelled, energized and happy in the morning – until lunch time. I used to think oatmeal was so boring and not tasty at all. But there are many ways to create the perfect and Easy Creamy Oatmeal Breakfast. Today, I wanna share with you one of my favourite ways to create a breakfast that is quick, easy and nutritious.But first, before we proceed. Let me quickly tell you about the health benefits of oats.
Health benefits of oats
Oats are technically a gluten-free* cereal grain. They are very high in dietary fibers, which is excellent for heart health and the health of your digestive system. Oats can also help reduce cholesterol and make you feel fuller longer. Because they are so rich in fibers, they can also regulate your blood sugar levels. Oats also contain trace minerals, like manganese, phosphorus, selenium, magnesium, iron, copper and B vitamins, which are essential for your body’s metabolism and energy levels (1). Finally, oats are a good source of plant-based protein – packing 8 grams of protein per 2/3 of a cup. Not bad, right?
*For those of you with gluten sensitivities or allergies, it is important to note that oats are naturally gluten-free. However, they are often grown and processed in plants that also process wheat products. Therefore, to be safe, make sure that you get your oats from a provider that can guarantee that there has been no cross-contamination between the oats and other wheat products (2).
Okay, let’s get to the recipe now.
Easy Creamy Oatmeal Breakfast
Ingredients:
- 1 cup of rolled oats or old-fashioned oats
- 1/2 cup of coconut milk (or any other plant milk you enjoy)
- 1 cup of filtered water
- 1 Tbsp of cinnamon
- Optional: 1 date finely chopped
- Toppings: coconut flakes, dried cranberries, fresh fruits, chocolate chips, walnuts, etc.
How to:
- Add the oats, chopped date and water to a pot and bring to a boil. Once boiling, reduce the heat, cover and simmer until the grains are soft (approximately 10 minutes).
- Add some cinnamon and the coconut milk to your oats as they are cooling down and the heat is off. Mix everything in.
- Pour your creamy oatmeal mixture into a bowl. Sometimes I like to add a bit of coconut milk if I want my oatmeal even creamier.
- Have fun and add whatever toppings you like. I always enjoy mine with some fresh fruits- bananas, pears, apples, berries- coconut flakes, dried fruits like cranberries, walnuts or granola and finally a few chocolate chips if I want a little chocolate flavour with my oatmeal.
