So when I switched my diet and decided to cut out dairy, I was really wondering how I would survive (yes, it’s a survival issue :p) without my dear Italian dishes; especially the ones requiring dairy products, such as lasagna, pizza or creamy sauces like Alfredo. Thankfully, after doing some research online, I discovered that many of these Italian dishes could be reproduced using absolutely no dairy :).
Tonight, I was in the mood for some Alfredo sauce and pasta. It’s always one of my favourite go-to quick and satisfying meals. However, I decided to try out something new. Since I had intended to add some sundried tomatoes into the dish, I thought why not mix a few of these into the sauce?
Well, let me tell you I am so glad I did! It turned out absolutely perfect: creamy, cheesy with a nice salty-tomato-y kick!
So without, further ado, let me introduce to you this very easy, quick AND delicious Sundried Tomato Alfredo Pasta recipe.
You will only need a couple of ingredients and feel free to make it without the sundried tomatoes if it is not your thing ;).
Sundried Tomato Alfredo Sauce Recipe
Ingredients:
- 3/4 cup of raw cashews (optional: feel free to soak them for 30 min prior to blending)
- 1/4 cup of chopped onion
- 2-3 garlic cloves (finely chopped)
- 2.5 Tbsp of nutritional yeast
- 1 cup + 1/4 cup of water (feel free to use less of more water depending on how you like your sauce)
- 1 tsp of lemon juice
- 1/2 tsp of paprika
- 1/3 cup of sundried tomatoes
- 1-2 tsp of extra virgin olive oil
- sea salt & pepper to taste
How to:
- Sautée the onions and garlic into a frying pan with a bit of olive oil
- Put all of the rest of the ingredients into a food processor or high-powered blender and add the sautéed onion and garlic.
- Blend until well combined.
- Taste for consistency and add more spices/ water to your liking.
That’s it! It is a really easy recipe and you can mix this sauce with pasta and whatever else you like to add to your Alfredo sauce.
Tonight I chose to keep it simple and added some spinach, mushrooms and chopped cherry tomatoes. It was fantastic!
