As part of my regular routine, but even more so now that I am doing the “Plank and Green” October challenge, I enjoy making myself green smoothies for breakfast in the morning.
Lately, inspired by my dear friend and colleague Stephanie Tucci, I decided to play with the flavour combination of ginger, coconut and banana.
I like each one of these foods separately and so I thought why not combine them together?
As weird as this idea sounded to me at first, it actually turned out to be a great combination. Sweet, creamy, yet there is an extra kick of freshness thanks to the ginger!
Since I have to drink a green smoothie everyday during this challenge, I figured why not create my own green smoothie using this exact combination…
And so the Ginger Coconut Green Delight was born. This smoothie is absolutely delicious. I strongly encourage you to give it a try ;).
Ginger Coconut Green Smoothie
Ingredients:
1-2 frozen bananas (make sure they are ripe before you freeze them, without the peel!)
1.5-2 cups of almond milk
1-2 leaves of Kale (feel free to substitute for Spinach)
2-3 tbsp of shredded coconut (use coconut cream instead if you have some)
1 full tsp of grated fresh ginger (or more, depending on your taste buds)
1 tbsp of chia seeds (or ½ avocado)
1 tsp of honey (as sweetener, but you may use maple syrup or no sweetener at all)
How to:
Place all the ingredients into your blender. Blend away on high for about 3-5 minutes. Voilà! You have yourself a delightful green smoothie :).
Note: I added some cacao nibs and shredded coconut on top for extra crunch (optional).Enjoy and please let me know what’s your favourite “green” smoothie combination ;).- Sarah.
