For the past few weeks now, I have had an insatiable need to bake – muffins, more specifically. So far on the blog, I have only shared one other muffin recipe with you all. Well, this is about to change as I have been having fun testing out and recreating new easy and health-supporting muffin treats for you all. Taking advantage of apple season, I made these delicious and Healthy Apple Blueberry Muffins 2 weeks ago. I am finally adding the recipe here on the blog for your culinary pleasure (and as promised on my Instagram ;)).
What I love about this recipe is how versatile it is. Take the fruits, for example, if you don’t have any apples or blueberries on hand, you can easily skip one of them and add more of the other fruit instead; or choose different fruits all together. These muffins with pears and raspberries would be just as delicious.
Next, I also love that I was able to create some fluffy muffins, keeping the recipe gluten-free and dairy-free – in case you have any allergies or sensitivities to gluten and dairy.
The last thing I wanted to share before we dive into the recipe is that these muffins make a great breakfast and snack as they will keep your blood sugar levels balanced. Contrary to most muffins, which can sometimes spike up your blood sugar levels & leave you wanting more sugar, these are quite dense in nutrition. Indeed, they contain enough complex carbohydrates, fibers, protein and healthy fat to make you feel satiated and satisfy any sweet craving.
Now, let’s take a look at what you will need to re-create these:
Healthy Apple Blueberry Muffins:
Ingredients:
- 2 cups of gluten-free flour ( I used a mix of rice + oat flour)
- 3/4 cup coconut sugar
- 1.5 cups of apples, diced (small enough so that it can bake properly- see photo below)
- 1/2 cup of frozen blueberries (fresh is fine too)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp nutmeg (skip it if you don’t have any)
- 1/4 tsp sea salt
- 1 tbsp cinnamon
- 1 tsp of vanilla powder
- 1 large egg (at room temperature)
- 3/4 cup oat milk (or almond milk)
- 1/2 cup of coconut oil (melted)
For the toppings:
- 1 Tbsp of coconut sugar
- 1/2 cup of rolled oats
- 1/3 cup of crushed walnuts
- 1 tsp of melted coconut oil
How to:
- Start by preheating the oven at 400 degrees F (roughly 200 degrees C – adjust according to your oven)
- Line your muffins moulds with cupcake liners or add some coconut oil to grease your muffin tins.
- Then in a big bowl, add all of your dry ingredients (flour, sugar, spices, baking powder & baking soda).
- In a separate bowl, combine your wet ingredients. Start by whisking the egg and add the melted coconut oil (make sure it is cool, so you avoid cooking the egg). Then add the milk and whisk it all together.
- Pour the wet ingredients into the dry ones, slowly. Mix it all together, gently.
- Fold in the fruits (apples & blueberries). Make sure you do not over-mix the batter to keep your muffins light & fluffy.
- Divide the batter into 12 muffin cups & add the topping mixture afterwards.
- Bake them for 15 to 20 minutes in a regular oven**. When a knife/tooth pick placed in the center comes out clean, they’re ready!
** If using a smaller oven (i.e. toaster oven), adjust the temperature to 230 degrees C and bake them for 30 to 40 minutes.
Let them cool off a bit and then enjoy!
