Today I had the fun opportunity to crack open a fresh coconut for the first time! One of my friends here recently came back from Cameroon and she gave me one (she knew I’d be delighted!) :).
I looked up online precisely how I was suppose to crack it open. Turns out just a few taps with a heavy knife will do. As soon as you hear a cracking sound, be ready to collect the delicious juice- fresh coconut water! This coconut was an old one so the meat was quite sturdy and not very easy to remove (let’s just say I need some more practice with it…). All around, it was quite the experience but it was so worth it!
The juice and flesh I was able to extract from the coconut were so fresh and absolutely delicious in my smoothie this morning.
Pina Colada Green Smoothie
- ½ to 1 cup of fresh coconut meat (for its healthy fat content)
- ½ cup of pineapple (chopped)
- 1 cup of spinach
- 1 cup of water
- Juice extracted from the fresh coconut (full of electrolytes!), in my case about 1/3 cup
- 1 banana (optional: frozen for a chilled smoothie)
- 1 tbsp of chia seeds (for added proteins and omega-3 fatty acids)
