Ever since I made a stop at Black Rabbit Café and tried their Valentine’s Bunny Hops (aka raw cacao truffles) a couple of days ago, I just knew I would end up recreating these delicious treats somehow with the ingredients I had on hand in my kitchen. After looking at various websites to get some inspiration and more ideas about the ingredients I could use, I decided to just go with the flow and recreate my own version anyways. I pretty much always eyeball most of my measurements anyways :p.  I am so glad I was inspired to recreate these little treats because THESE, these raw chocolate truffles, turned out way more delicious than I anticipated. Once they were completely set & had hardened a bit in the freezer, it was love at first bite! They were so rich and tasty that I had to come here and share the recipe with you all. They are so easy to make, yet so super nutritious. You will love them, I can guarantee it!

And you know what’s the best part about it all? Since these chocolate truffles are completely raw, your body will assimilate all of the beneficial nutrients contained in them much more easily (because they are not cooked or processed, the enzymes, vitamins and minerals are all still intact). They contain raw cacao, which is great for your mood and contains serotonin and magnesium, which are both great to help you relax. This recipe also called for goji berries, which are known to contain more vitamin C and antioxidants than berries, plus as a bonus this superfood is also a great sexual tonic (meaning: libido-boosting ;)). Finally, another superfood ingredient in these raw chocolate truffles is coconut (you can read all about the benefits of coconut over here).

Let’s make these bad boys, now, shall we?

Raw Chocolate Truffles

Ingredients:

  • 8 dates (to make them softer, feel free to soak them in a little bit of water for 5-10 min).
  • 1/2 cup of raw almonds
  • 1/4 cup of walnuts
  • 1 tbsp of goji berries
  • 1 tbsp of virgin coconut oil
  • 1 tsp of cinnamon (great way to regulate blood sugar levels & anti-inflammatory)
  • 1-2 Tbsp of raw cacao powder
  • 1 tsp of vanilla extract
  • a dash of sea salt
  • 1 Tbsp of water (just to help the mixture come together, if necessary)

Toppings (to roll your truffles in):

  • raw cacao powder
  • chopped almonds
  • shredded coconut
  • goji berries
  • raw cacao nibs
  • other nuts or seeds

Let your taste buds guide you, be creative and have fun with it 😉

Instructions:

Place all of the ingredients into a food processor (or high-powered blender) and pulse until you have a nice and thick consistency. Add more or less water, if needed. This is the consistency I got once done:

Make small balls with the batter and roll them into your toppings. Place them on onto parchment paper on a baking sheet or other dish and let them set into your fridge or freezer for at least 10- 20 minutes. Make sure they do not freeze completely or you will have to let them thaw before you can enjoy them. So use the fridge to be safe, but freezer if in a hurry ;).
